The scientific name of the elder tree is Sambucus nigra and this plant is a member of the Caprifoliaceae family.

Sowing & Growing

If you want to propagate elderberries from cuttings, you have two good options: softwood cuttings in late spring or early summer, or hardwood cuttings in late autumn or winter. For softwood cuttings, grab some 4-6 inch shoots with a few leaves on top and root them in a pot filled with potting mix. I

f you’re going the hardwood route, look for 6-10 inch shoots that have a few buds and plant them deeply in a pot. Just make sure to keep them somewhere frost-free to overwinter!

Harvesting & Prep

Harvesting elderflowers and elderberries calls for different techniques and timings. For elderflowers, the best time to pick them is on dry, sunny days when the blooms are fully open and a creamy white colour—ideally in the late morning after the dew has dried.

In contrast, elderberries should be gathered when they're a rich purple to black, typically in late summer or early autumn. Just be careful to remove as much of the stalk and stem as you can, since they're toxic and can upset your stomach.
